Ingredients for 10 servings:
- 700 g potatoes
- 3 large carrots
- 3 stalk(s) leeks
- 1 large onion(s)
- 200 g soup noodles (small star-shaped noodles, Stellini)
- 3 liters of vegetable broth
- 2 tbsp olive oil
- 1 bunch of parsley

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Peel and finely dice the potatoes and onion. Cut the carrots and leek into small slices or rings. Finely chop the parsley. Heat the olive oil in a large pot and sauté the onions. Pour in the vegetable stock and cook the potatoes, carrots, and leek, covered, for 10-15 minutes. Now add the soup noodles and cook for about 4 minutes, stirring occasionally. Finally, add the parsley and bring everything back to a boil. Season with salt and pepper.
