Potato sticks for snacking

Ingredients for 1 servings:

  • 120 g potato(s), floury, peeled, weighed
  • salt water
  • 75 g butter, soft
  • 100 g flour
  • 55 g cheese (Gruyere), grated
  • 1 egg yolk
  • 2 tbsp cream
  • Salt
  • n. B. Caraway
  • e.g. oregano
  • n. B. Thyme
  • n. B. Sea salt, coarse
  • Flour for the work surface

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 10 minutes

Peel the potatoes, cut into small cubes, and boil in salted water until soft. Drain and allow to cool. Then press them through a potato ricer or mash them with a potato masher. Preheat the oven to 190°C. Knead the potato mixture with butter, flour, a little salt, and cheese until smooth. On a floured surface, form a log and cut off small 10g pieces. Roll these into thin sticks. Place these on a baking sheet lined with baking paper. Whisk the egg yolk with the cream and brush the sticks with it. Sprinkle with sea salt, caraway, thyme, or oregano, if desired. Bake on the middle rack for about 15 minutes until golden brown.
