Ingredients for 8 servings:

  • 1 kg potatoes, floury
  • 6 eggs
  • 2 tbsp flour
  • 100 g butter
  • 2 tsp salt
  • ½ tsp nutmeg
  • ½ tsp black pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

A different side dish for roast

Peel the potatoes, quarter them, and boil them in water with a teaspoon of salt for about 20-25 minutes. Drain and let the steam evaporate. Separate the eggs. Beat the egg whites until stiff peaks. Beat the egg yolks with butter until fluffy. Add the flour, nutmeg, pepper, and 1 teaspoon of salt. Preheat the oven to the grill setting (hottest setting). Mash the lukewarm potatoes and mix with the egg yolk mixture. Fold in the beaten egg whites. Line a small baking dish (about 20x30cm) with baking paper. Spread a portion of the potato mixture about 0.5cm thick and bake for about 4 minutes, until it is noticeably browned. Then add the next layer, and so on, until it is all used up. Cut the Baumkuchen into diamonds or squares. A great accompaniment to all roasts and meat dishes, or to eat on its own, perhaps with a dip. Serve hot, lukewarm, or cold.
