Spicy potato wedges
Wash the potatoes and cut into quarters or eighths, depending on their size, then let them stand in the water for 5 minutes. Mix all the other ingredients in a glass. Drain the water from the potatoes and marinate them in the oil and spice mixture. Place the potato wedges cut-side up on a baking sheet lined with baking paper and bake in a preheated oven at 220°C for about 25 minutes. Serve hot. For the cocktail sauce, mix the ketchup, mayonnaise, lemon juice, cognac, and salt well with a fork in a glass. Serve with the potatoes. Tip: Add a little thyme, Tabasco, or cayenne pepper to the marinade. I use 5 medium or 2-3 large potatoes per person.
