Prawns Portuguese style

Ingredients for 4 servings:

  • 1 ½ liters of water, hot
  • 6 tbsp oil
  • 10 peppercorns (Szechuan pepper – if available)
  • 1 tsp sambal oelek
  • 1 chili pepper(s), deseeded, chopped, red
  • 3 garlic cloves, roughly chopped
  • 1 lemon(s), the juice
  • ½ bunch coriander greens, fresh, chopped
  • 1 flatbread(s)
  • 1 kg prawn(s) (Black Tiger King Prawns, frozen, complete with head and shell), thawed
  • 1 shot of red wine

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat a large pan of oil and quickly add the Sichuan peppercorns, sambal oelek, chopped garlic cloves, and a chopped chili pepper. Immediately add the prawns and a splash of red wine and fry for about 5 minutes, stirring constantly, until the black prawns are a lovely pink. Then add the hot water, the bunch of cilantro, and the lemon juice, and simmer for another 2 minutes. Serve with hot flatbread. The best part is the broth, which you enjoy hot with the flatbread dipped in it.
