Brussels sprouts are a vitamin-rich winter vegetable that tastes even better after the first frost. Brussels sprouts contain vitamin A, vitamin B2, vitamin C and many minerals and fibers. Here we explain how to properly prepare Brussels sprouts as a side dish and what you should bear in mind.

  • When preparing fresh Brussels sprouts, it is important to wash and trim them thoroughly. To do this, remove the older and withered outer leaves of the cabbage florets and cut off the stalks.
  • Before cooking, you can cut the stalks crosswise. This allows the Brussels sprouts to cook faster and more evenly.
  • To cook the Brussels sprouts, place the florets in a large pot of boiling salted water. Cover and cook the cabbage over medium heat for about 10 to 15 minutes.
  • Tip: A pinch of sugar takes the cabbage flavor out of the Brussels sprouts.
  • If you want to gently steam the Brussels sprouts, put the cabbage florets with a little water in a large pan with the lid on.
  • Tip: Don’t throw away the cooking water because it contains a lot of nutrients. Prepare a sauce from it, for example.
  • When the Brussels sprouts are done, drain them through a sieve. Return it to the pan or pot and add a small knob of butter to glaze.
  • Salt and nutmeg are great for flavoring Brussels sprouts. Crispy fried bacon cubes or roasted flaked almonds are also suitable as a refinement.

Recipe: Brussels sprouts casserole

To prepare a Brussels sprouts casserole for four people, you need a bag of fresh Brussels sprouts, 250 g grated cheese (e.g. Emmental), 200 g cooked ham, and a cup of crème fraîche, salt, pepper, and nutmeg.

  1. Pre-cook the Brussels sprouts for about six minutes and then place them in a buttered casserole dish.
  2. Cut the cooked ham into cubes or strips and place it over the Brussels sprouts.
  3. Mix the creme fraiche with the grated cheese. Season the mixture with pepper, salt, and some grated nutmeg. Pour the mixture into the casserole dish.
  4. Let the casserole gratinate in a preheated oven at 200 degrees for about 30 minutes.
