Ingredients for 1 servings:

  • 30 g oat flakes, fine
  • 1 banana(s)
  • 1 egg(s)
  • 30 g vanilla protein powder
  • 1 tsp baking powder
  • 1 tsp honey
  • 200 g low-fat curd cheese
  • 30 g muesli
  • 50 g currants, fresh or frozen
  • 1 tbsp almonds, chopped

Preheat the oven to 180°C fan/convection oven (220°C top/bottom heat). Finely grind the oats in a blender. Add the banana and blend. (If you don’t have a blender, you can also use the oats as they are and mash the banana with a fork.) Then add the egg, protein powder, baking powder, honey, and low-fat quark and mix. Fold in the basic muesli and currants, reserving about 1-2 tablespoons of the berries. Divide the batter among 8 muffin cups and garnish with berries and almonds. Bake in a hot oven for about 15-20 minutes. This recipe is suitable for a healthy diet and a very good source of energy, for example, before exercise, and also provides plenty of protein for muscle building after exercise. With 8 muffins, one muffin has 103 kcal, contains 11.3 g of carbohydrates, 2.3 g of fat, and 8.5 g of protein. This recipe makes about 8 muffins. Per serving: 411 kcal
