Puff pastry corners with delicious feta cheese filling

Ingredients for 1 servings:

  • 175 g puff pastry
  • 100 g sheep cheese, Greek
  • 1 tbsp mayonnaise
  • Herbs of Provence (frozen)
  • possibly olives, pickled in paprika or chili
  • possibly salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Filling with feta cheese, mayonnaise and herbs of Provence

For the filling, first crumble the feta cheese (preferably fresh from the market). Then simply add the mayonnaise (not too much) and the herbs de Provence and mix everything into a paste. Season with salt and pepper if desired. You can also add olives (preserved in paprika or chili) to the paste. I used fresh puff pastry; if you’re using frozen puff pastry, you’ll need to defrost it well in advance. Cut the puff pastry into squares and place 1-2 teaspoons of the paste in the center. Now fold the puff pastry pieces together and seal them. Bake the whole thing at 200°C for 15-20 minutes.
