Pumpkin in tomato sauce

Ingredients for 3 servings:

  • 400 g pumpkin(s) (butternut pumpkin)
  • 1 small onion(s)
  • 1 tbsp oil
  • Salt, to taste
  • 1 tbsp herbs de Provence
  • 125 g tomato paste
  • 200 ml water
  • Paprika powder
  • pepper
  • 1 cup Cremefine sour cream

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Clean and dice the pumpkin. Finely dice the onion and sauté in oil until lightly browned. Add the pumpkin and simmer for a few minutes. Add the salt, Provençal herbs, and about 200ml water and cook over low heat for about 10 minutes. Stir in the tomato paste and water and simmer for another 10 minutes, until the pumpkin flesh is tender. Season with paprika and pepper and finish with sour cream. Serve with pasta.
