Ingredients for 20 servings:
- ½ pumpkin(s), Hokkaido
- 2 shallots
- 1 carrot(s)
- 1 vanilla pod(s)
- 1 pinch(s) sweet paprika powder
- Sea salt
- Sugar
- Pepper, black from the mill
- 1 piece(s) ginger, half a finger size

- 150 g sour cream

The quantities given are for 20 people as a small finger food portion. Scrape the seeds out of the pumpkin half with a spoon. Then cut the pumpkin into small cubes. Peel the shallots and carrots and also cut them into fine cubes. Mix everything together. Scrape out the seeds from the vanilla pod and mix with olive oil, paprika, salt, sugar, pepper, and a dash of lemon juice. Finely grate the ginger. Mix everything well with the diced vegetables. Season to taste, if desired. Season the sour cream with lemon juice, salt, sugar, and pepper. Preheat the oven to 200 degrees Celsius. Prepare five pieces of aluminum foil, approximately the size of a DIN A4 sheet. Place 1.5–2 tablespoons of the mixture onto each piece and seal the package. Place the packages on a baking sheet and bake at 200 degrees Celsius for about 20 minutes. Serve the packages on a small plate with a dollop of sour cream. Each guest opens their own package and gets the full aroma experience.
