Ingredients for 3 servings:

  • 1 Hokkaido pumpkin(s)
  • 4 carrots
  • 2 stalk(s) leeks
  • 1 apple
  • 1 bunch of spring onions
  • 1 can coconut milk
  • some water
  • some butter
  • some lemon juice
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Delicious autumn cuisine!

Wash and dice the pumpkin, carrots, leek, and apple. Sauté the cubes along with the onions in heated butter and deglaze with coconut milk and water to cover. Let the vegetables simmer for about 15 minutes. Add a little lemon juice and puree the vegetables. Season the soup with salt and pepper.
