Pumpkin waffles

Ingredients for 1 servings:

  • 250 g pumpkin flesh, (eg nutmeg) finely grated
  • 4 eggs
  • 120 g butter or margarine
  • 100 g powdered sugar
  • 1 packet of vanilla sugar
  • 250 ml milk
  • 250 g flour
  • ½ pack of baking powder
  • Fat, for the waffle iron

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the finely grated pumpkin flesh in boiling salted water for 1-2 minutes, drain, and let cool. Cream the butter, vanilla sugar, and sugar until very fluffy. Beat in the eggs one at a time. Mix the flour with the baking powder and stir into the batter alternately with the milk. Finally, fold in the pumpkin flesh. Heat the waffle iron, grease it, and bake the waffles until golden brown. Sprinkle with powdered sugar and serve.
