Punschkis – quick yeast pastries from the pan

Ingredients for 1 servings:

  • 500 g wheat flour
  • 60 g sugar
  • 30 g fresh yeast
  • 300 ml milk
  • 1 tsp, leveled salt
  • 2 handfuls of sugar for sprinkling
  • 500 ml oil for frying

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 45 minutes; Total time approx. 2 hours 30 minutes

Pączki, approx. 50 pieces

Crumble the yeast. Place the flour, sugar, yeast, milk, and salt in a bowl and knead for at least 5 minutes until you have a nice yeast dough. Cover the dough and let it rise in a lukewarm place for about 40-60 minutes. In the meantime, prepare a pan with about 1 cm of rapeseed or sunflower oil. As soon as the dough has risen, use two oiled measuring spoons to scoop out small dumplings from the bowl (in one piece) and place them directly into the fat in the pan. Fry the Punschkis for about 5-6 minutes, turning them several times, until golden brown. Transfer the pastries directly from the fat to a plate sprinkled with sugar and turn them over. Let them “dry out” a little on kitchen paper. Makes about 50 pieces. We’ve been having these little pastries every New Year’s Eve and at Carnival for decades.
