Quail Egg Meatballs on Vegetable Rice
The perfect quail egg meatballs on vegetable rice recipe with a picture and simple step-by-step instructions.
Quail Egg Mettballs:
- 10 Quail eggs
- 250 g Beef meat
- 1 Egg
- 4 tbsp Breadcrumbs
- 1 tsp Salt
- 1 tsp Sweet paprika powder
- 4 tbsp Peanut oil
Vegetable rice:
- 100 g Basmati rice
- 250 ml Water
- 1 tsp Salt
- 0,5 Snake cucumber approx. 200 g
- 0,5 Red peppers approx. 100 g
- 1 Large onion approx. 150 g
- 2 Garlic cloves
- 1 piece Ginger approx. 10 g
- 1 Red chilli pepper
- 1 piece Leeks approx. 100 g
- 2 Spring onions approx. 25 g
- 1 tsp Mild curry powder
- 0,5 tsp Ground cumin
- 1 tbsp Sweet soy sauce
- 1 tbsp Light soy sauce
- 2 Strong pinches of salt
- 1 Strong pinch of pepper
To serve:
- 2 Stalk Parsley for garnish
Quail Egg Mettballs:
- Boil quail eggs in bubbly boiling water for about 5 minutes, quench and carefully peel off. Mix / knead the beef mince with an egg, 4 tablespoons of breadcrumbs, 1 teaspoon of salt and 1 teaspoon of paprika. Divide the prepared mince into approx. 10 portions, form balls with quail eggs inside, fry in a pan with peanut oil (4 tbsp) until golden-brown, remove and keep warm in the oven at 50 ° C.
Vegetable rice:
- Cook / cook basmati rice (100 g) in salted water (250 ml / 1 teaspoon) (see my recipe Cooking Rice, Cooking Rice 🙂 and tearing through with a fork. Peel the cucumber, cut in half, scrape out with a small spoon, halve again and cut into pieces. Clean and wash the peppers and cut into small diamonds. Peel the onion, cut into eighths and cut into wedges. Peel and finely dice the garlic cloves and ginger. Clean, wash and finely dice the chilli pepper. Put the prepared vegetables in the frying pan and fry vigorously / stir-fry with mild curry powder (1 teaspoon), ground cumin (½ teaspoon), sweet soy sauce (1 tbsp), light soy sauce (1 tbsp), salt (2 big pinches) and pepper Season (1 big pinch) and let everything simmer for about 8-10 minutes. Stir again and again. Finally fold in the cooked rice and briefly heat / stir-fry.
Serve:
- Carefully cut the quail egg meatballs in half and serve with the vegetable rice garnished with parsley.
