Quark Cream Cake

The perfect quark cream cake recipe with a picture and simple step-by-step instructions.

For the dough:

  • 3 Egg yolk
  • 3 tbsp Warm water
  • 150 g Sugar
  • 1 packet Vanilla sugar
  • 100 g Flour
  • 100 g Food starch
  • 3 tsp Baking powder
  • 3 Protein

For the filling:

  • 1000 g Quark
  • 250 g Sugar
  • 1 tbsp Lemon juice
  • 2 packet Gelatin
  • 2 cups Whipped cream
  • 2 Cans Mandarins

For decoration:

  • 2 cups Whipped cream
  • 2 packet Vanilla sugar
  • 2 packet Cream stiffener

For the dough:

  1. Put the egg yolk and warm water in a bowl and stir until frothy.
  2. Add sugar and vanilla sugar and stir.
  3. Mix the flour, cornstarch and baking powder, sieve, add and stir in.
  4. Beat the egg whites until stiff, add and stir in.
  5. Put the dough in a springform pan.
  6. Bake at 175 degrees top and bottom heat for about 30 minutes.

For the filling:

  1. Put quark, sugar and lemon juice in a bowl and stir.
  2. Mix the gelatine, let it swell and add to the quark mixture.
  3. Whip the whipped cream until stiff and stir in.
  4. Cut through the base once, put a cake ring around it and spread half of the quark cream on the first base.
  5. Drain the tangerines and set aside 12 pieces for decoration. Place the mandarins on the cake.
  6. Put the rest of the quark cream on top.
  7. Lay the second shelf on top.

For decoration:

  1. Beat the whipped cream with the vanilla sugar and cream stiffener until stiff.
  2. Spread the cream on the cake and the edge.
  3. Put the remaining cream in a piping bag, decorate the cake and place the remaining 12 mandarins on top.
