Ingredients for 1 servings:
- 500 g low-fat curd cheese
- 60 g flour
- 3 egg yolks (alternatively 2 eggs)
- 2 tbsp sugar
- 1 packet of vanilla sugar
- 1 pinch of salt
- Flour for the work surface
- Butter, better clarified butter, for frying
- Sour cream and/or jam to serve

Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes
Classic good breakfast
Put the quark in a bowl and mash it lightly with a fork. Add the egg yolks, sugar, vanilla sugar and salt and mix well. Sift the flour into the dough. Knead the dough well. Sprinkle the table with flour. Moisten a spoon with water and place some dough from the bowl into the flour. Now roll the dough in the flour and at the same time shape it into an oval coin. Heat the butter in a pan and fry the quark coins in the pan over medium heat for 4-5 minutes on one side and then for 4-5 minutes on the other side. The quark coins taste best with sour cream or jam. Tip: Depending on how you want the quark coins to be consistent (firmer or looser), you can add a little less flour or roll them in a little less flour.
