Quesadillas with spring onions and corn

Ingredients for 8 servings:

  • 24 tortillas
  • 1 cup sour cream
  • 1 cup crème fraîche with herbs, light
  • 200 g herb cream cheese
  • 2 bunch spring onions
  • ½ can corn
  • 300 g cheese, grated
  • 4 tsp sambal oelek
  • salt and pepper

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

super quick, perfect for parties, vegetarian

Wash and finely chop the spring onions. Mix all the filling ingredients together and season with salt and pepper. Spread the filling on one tortilla and cover with another. Heat in a nonstick pan (without oil) on both sides until browned to your liking. Cut into pieces and serve warm or cold.
