Quick leek soup

Ingredients for 4 servings:

  • 1 onion(s)
  • 2 stalk(s) leeks
  • 250 g potatoes
  • 500 ml broth
  • 1 cup crème fraîche
  • salt and pepper
  • Thyme
  • nutmeg

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely dice the onions and sauté in oil. Trim and halve the leek, wash thoroughly, and cut into thin strips. Add to the onions and sauté. Wash and roughly dice the potatoes, add to the vegetables, and sauté. Add the broth and bring to a boil. Season with salt, pepper, thyme, and nutmeg and simmer over moderate heat for 20-25 minutes. Purée the soup, stir in the crème fraîche, and season again to taste.
