Quick minced meat and vegetable stew

Ingredients for 4 servings:

  • 300 g minced meat, mixed
  • 450 g mixed vegetables, frozen
  • 1 can tomatoes, chopped
  • 250 g tortellini, fresh, from the refrigerated section
  • 2 cloves garlic
  • 1 ½ liters of meat broth
  • 200 g sour cream
  • 150 g cream cheese spread
  • 4 tbsp tomato paste
  • 1 tbsp olive oil
  • Salt
  • Cayenne pepper
  • Oregano, dried
  • Basil, dried

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

with tortellini

Heat the olive oil in a pan and fry the minced meat until crumbly. Peel and chop the garlic cloves, and sauté them. Add the meat broth, tomatoes, and vegetable mixture; cover and simmer over low heat for 15 to 20 minutes, until the vegetables are tender. Stir in the sour cream, processed cheese, and tomato paste. Add the tortellini and simmer in the soup until tender. Season to taste with salt, cayenne pepper, and herbs. Serve with fresh ciabatta.
