Vegetarian, quick and easy

Boil eggs until hard-boiled or soft-boiled. Sauté butter in a saucepan. Add flour and stir vigorously. Sauté the butter and flour mixture until lightly browned and deglaze with half of the water. Stir vigorously to avoid lumps. Then add the remaining water and the stock cubes. Add salt, pepper, and sugar and bring to a boil. Then simmer gently. Add mustard until the sauce has a strong mustard flavor. Add a little more water if the sauce is too thick. Serve with the peeled eggs. Serve with mashed potatoes.
