Ingredients for 4 servings:

  • 3 bell peppers, colored
  • 3 stalks of thyme
  • 3 stalks of basil
  • 2 tbsp vinegar (white wine vinegar)
  • salt and pepper
  • 1 pinch(s) of sugar
  • 2 tbsp olive oil
  • 200 g goat’s cheese (roll), alternatively feta cheese

Working time approx. 25 minutes; Total time approx. 25 minutes

A starter with a difference

Clean the washed peppers and quarter them lengthwise. Place them skin-side up on a baking sheet. Roast in a preheated oven at 225°C (convection oven) for about 15-20 minutes (the skin will then develop dark blisters). Remove from the oven. Cover with damp kitchen paper and let cool for about 10 minutes, then peel. Wash and pick the herbs. Mix together the vinegar, salt, pepper, and sugar, then whisk in the oil and thyme. Cut the cheese into 12 pieces and toss them in the mixture. Roll a piece of cheese into each pepper quarter and secure with toothpicks. Drizzle with the marinade and let stand for at least an hour. Garnish with basil leaves. This goes well with grissini, for example.
