Quick pepper pan with feta cheese

Ingredients for 4 servings:

  • 3 peppers, red
  • 2 tomatoes
  • 1 can of tomatoes, chopped
  • 2 onions
  • 1 clove(s) garlic
  • 3 carrots
  • Olives, black
  • 1 pack of sheep’s cheese
  • olive oil
  • salt and pepper
  • Paprika powder
  • Herbs

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Heat olive oil in a pan, chop the onions, and fry. Chop the garlic clove and add it to the pan with the tomatoes. Peel and thinly slice the carrots, slice the bell peppers, and add both. Bring the vegetables to a boil while stirring, then stir in the canned tomatoes and halved olives. Simmer in a covered pan. Season to taste and finally add the herbs. When everything is cooked, remove the lid, sprinkle the shredded feta cheese over it, and let it melt. Rice goes very well with this dish. While you divide the rice among the plates, let the feta cheese melt, and everything is ready.
