Ingredients for 1 servings:

  • 500 g low-fat curd cheese
  • 260 g orange(s), peeled
  • 380 g strawberries
  • 100 g breadcrumbs
  • 2 egg yolks
  • 2 egg whites
  • 50 g margarine
  • 50 g fructose
  • 1 tbsp lemon juice
  • 1 vanilla pod(s)
  • 1 pack of gelatin
  • some sweetener, liquid

Working time approx. 40 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 40 minutes

Place the breadcrumbs, margarine, and fructose in a saucepan and melt everything, stirring constantly. Stir carefully, as the ingredients tend to burn. Now pour 2/3 of the mixture into a 24 cm springform pan and press down firmly with a spoon. Then mix the low-fat quark with the egg yolk, vanilla, sweetener, and lemon juice until smooth. Soften the gelatin in a water bath. First, mix some of the quark mixture with the gelatin, then mix everything with the remaining quark. Then fold in the stiff beaten egg whites. Spread the fruit over the dough and then pour the quark mixture over it. Spread the breadcrumbs over the surface and place the cake in the refrigerator.
