Quick tomato sauce with fresh tomatoes and balsamic vinegar

Ingredients for 4 servings:

  • 1 onion(s)
  • 2 cloves garlic
  • 1 bowl of tomatoes (cocktail tomatoes)
  • 2 cups crème fraîche with herbs
  • 1 small can of tomatoes, pureed or chopped
  • 2 tbsp balsamic vinegar
  • 1 bunch of basil
  • salt and pepper
  • 1 tsp vegetable broth, instant
  • 2 tbsp olive oil for frying
  • Cayenne pepper
  • n. B. Pasta of your choice, cooked
  • e.g. Parmesan, grated

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

fresh, summery and spicy

Peel and finely chop the onion and garlic cloves, and fry in hot olive oil. Add the passata and balsamic vinegar. Simmer briefly. Then stir in the crème fraîche and season with salt, pepper, and cayenne pepper to taste. Season with more balsamic vinegar, if desired. Finally, stir in the fresh basil (torn or chopped). Wash and quarter the cherry tomatoes, and place them in a bowl. Fold in the cooked, hot pasta of your choice. Pour the sauce on top and mix everything together. Serve sprinkled with Parmesan cheese. We always serve this with wide tagliatelle or linguine.
