Ingredients for 6 servings:
- 1 cup rice
- 350 g peas
- 250 g carrot(s)
- 2 onions
- 1 bell pepper(s)
- 200 ml vegetable stock
- 2 tbsp tomato paste
- 1 tbsp peanut butter
- 2 tbsp curry powder
- 1 tsp smoked paprika powder
- 1 tsp cumin powder
- 1 tsp garam masala
- 1 tsp garlic powder
- ½ tsp cayenne pepper
- n. B. Salt to taste

a simple recipe for everyday life
Dice the onions and bell peppers. Thickly slice the carrots. Cook the rice in twice the amount of water for about 30 minutes. First, sauté the diced onions in vegetable oil until translucent. Add the spices and sauté for 1 minute. Stir in the tomato paste and peanut butter and sauté for another 2 minutes. Deglaze everything with the vegetable stock and stir in the remaining ingredients. Cover and cook for 7-10 minutes, stirring occasionally. Finally, season the curry rice with salt to taste.
