Quick vegetable noodles

Ingredients for 4 servings:

  • 1 red bell pepper(s)
  • 1 eggplant(s)
  • 1 zucchini
  • 2 cans of tomatoes
  • 2 shallots
  • oil
  • 1 small chili pepper(s)
  • Paprika powder
  • Salt
  • pepper
  • cream
  • Parmesan
  • 300 g pasta
  • possibly Mett
  • possibly seafood

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the pasta. Finely chop the shallots and vegetables and sauté in oil. Then add the canned tomatoes and season with spices. Simmer for about 15 minutes, until the vegetables are tender. You can also add cream, of course. If you like, you can fry the minced meat with the shallots and then add the vegetables, or mix seafood into the sauce. Mix the sauce with the pasta (we prefer spaghetti) and sprinkle with grated Parmesan cheese.
