Ingredients for 4 servings:
- 1 cup quinoa (approx. 200 – 250 ml content)
- 2 cups water
- 2 tsp vegetable broth, instant
- 400 g broccoli florets (weighed without stalk)
- 4 m.-sized onion(s)
- 4 tbsp olive oil
- 1 tsp turmeric
- ¼ tsp cumin
- 200 g pitted dates

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Wash the quinoa in a fine sieve (e.g., a hair sieve). Then add it to a pot with 2 cups of water. Add the vegetable stock. Simmer for 10 minutes, then remove from the heat and let it swell for another 10 minutes. Meanwhile, trim and wash the broccoli and divide it into very small florets, discarding the stalk. Finely dice the onions and fry them in a little olive oil. Add the broccoli and fry for about 5 minutes. Add the cumin and turmeric. Finely dice the dates and add them to the pan. Add the quinoa and fold in. Simply enjoy. Goes well with poultry or fish.
