Ingredients for 2 servings:
- 150g quinoa
- 1 bell pepper(s), red
- 1 bell pepper(s), yellow
- 4 tomatoes
- some olives
- 200 g cheese, e.g. goat cheese, sheep cheese or mozzarella
- 4 tbsp olive oil
- 8 tbsp red wine vinegar
- ½ lemon(s), the juice
- salt and pepper
- some chives, dried
- some parsley, dried

Cook the quinoa in salted water for 15-20 minutes according to the package instructions. In the meantime, dice the peppers, tomatoes, olives, and cheese. When the quinoa is ready, drain and let cool—otherwise, the cheese will melt. For the dressing, combine the olive oil, vinegar, lemon juice, salt, and pepper. Transfer the cooled quinoa to a bowl and mix with the chives, parsley, and dressing. Then fold in the remaining ingredients. You can eat the quinoa salad right away, but it tastes best if it sits for a few hours.
