Quinoa salad with radishes and bread dressing

Ingredients for 4 servings:

  • 250g quinoa
  • 1 handful of radishes
  • 3 spring onions
  • 1 head of romaine lettuce
  • 1 chili pepper(s)
  • 1 lemon(s)
  • 50 g feta cheese (optional)
  • 1 slice(s) wholemeal bread
  • 60 ml orange juice
  • 1 tbsp raspberry vinegar
  • 3 tbsp oil
  • e.g. chili powder

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

vegan – or with feta

Wash the quinoa and cook it in a 1:2 ratio with water (according to the package instructions) for about 15 minutes. Now puree the dressing ingredients (wholemeal bread, orange juice, vinegar, oil, and chili) in a tall container. Finely slice the vegetables and cut the lemon into wedges, and crumble the feta. Drain the quinoa in a colander, if desired, and place it in a bowl. Mix immediately with the dressing. This allows the flavors to blend perfectly. Now add the remaining ingredients, and our delicious salad is ready. Tips: You can serve the quinoa salad in a lettuce leaf, for example, for a great finger food idea. The salad tastes just as good the next day, making it a great meal for work, school, or a picnic. It tastes good hot or cold. Of course, you can also try a dressing of your choice.
