Rack of lamb in wild garlic crust on beans

Ingredients for 2 servings:

  • 600 g rack of lamb
  • 50 g chips (pork crusts)
  • ½ bunch wild garlic
  • 500 g green beans, frozen
  • 125g bacon
  • 1 tsp garlic granules
  • 1 tsp onion granules
  • 2 tbsp olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

from the oven

Finely chop the wild garlic. Place the wild garlic and pork rind in a mortar and pestle and grind into a paste with a little oil. Preheat the oven to 200°C (top/bottom heat). Place the beans, bacon, and seasonings in a deep, oiled casserole dish and mix well. Spread the paste over the rack of lamb. Place the rack on top of the beans and bake in the oven for about 40 minutes.
