Radish pasta with tomato sauce and fried egg

Ingredients for 1 servings:

  • 220 g radish(s)
  • 2 tomatoes
  • 1 egg(s)
  • some salt
  • Oil for frying

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

First, slice the radish with a spiralizer, place it in a sieve, and toss it with a little salt. This will help the radish to draw out any excess water. Chop the tomatoes and fry them in oil. After about 5 minutes, when they’re soft, mash them with a fork. Add the drained radish, heat everything through, and season to taste. Then remove the radish and tomatoes from the pan or simply push them to the side and fry the fried egg. You can, of course, simply omit the fried egg. Remove everything from the pan and serve.
