Raspberry-Peach Parfait

Ingredients for 1 servings:

  • 2 peaches (fresh or from a can)
  • 100 g raspberries
  • 4 egg yolks
  • 1 pack of vanilla flavor
  • 100 g sugar
  • 5 tbsp orange liqueur (alternatively orange juice)
  • 270 g raspberry jam (without pieces)
  • 500 g cream
  • 200 g chocolate shavings
  • Chocolate, dark and white for decoration

Instructions

Working time approx. 20 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 20 minutes

Blanch fresh peaches, remove the skins, and dice finely (simply dice canned peaches). Beat the egg yolks, vanilla extract, sugar, and orange liqueur over a hot water bath for about 5 minutes until light and creamy. Remove from the heat and whisk the cream until cold. Stir in the jam well. Whip the cream until stiff peaks and carefully fold in. Finally, fold in the chocolate shavings and fruit. Pour into a parfait mold or a loaf pan lined with cling film and smooth the surface. Cover with cling film and leave to set in the freezer for at least 8 hours. Before serving, briefly dip the mold in hot water, then turn the parfait out. Decorate with grated chocolate or other fruit, if desired. Cut into slices.
