Recipe for 200 meatballs

Ingredients for 200 servings:

  • 250 g toast bread
  • 250 g onion(s)
  • 2 kg minced meat, mixed
  • 6 eggs
  • 8 tbsp mustard
  • salt and pepper
  • nutmeg
  • 100 ml oil
  • Butter, for the onions

Soak the toast in water and squeeze out any excess water. If you like, you can cut off the crusts first, but it’s not absolutely necessary. Chop the onions and sauté them briefly in a little butter. Mix everything with the ground meat, eggs, mustard, and seasonings. Form 200 small dumplings (dip your hands in cold water to make rolling much easier) and fry each in hot oil for 5-8 minutes. The finished dumplings can be pre-frozen on a tray for 3 hours and then packaged in portions and stored in the freezer. To ensure the dumplings are all the same size, you can use an ice cream scoop or a small ladle or something similar. You can also use only ground beef. I prepare this amount every few months for my day-care children, who love meatballs, and so I always have a supply in the freezer.
