Red Cabbage or Red Cabbage with Kick
The perfect red cabbage or red cabbage with kick recipe with a picture and simple step-by-step instructions.
- 1,5 kg Fresh red cabbage
- 2 Onions
- 2 Apple
- 150 ml Balsamic vinegar dark
- 1 tsp Salt
- 300 ml Red wine
- 300 ml Apple or orange juice
- 5 Cloves
- 7 Allspice grains
- 9 Juniper berry
- 1 Cinnamon stick
- 3 Bay leaves
- 150 g Currant jelly or cranberries
- 2 tbsp Lard
- The main work: Divide the red cabbage and cut into fine strips or slice and place in a suitable saucepan. Peel and dice the onions, let them turn light brown in the lard.
- Peel and core the apples and cut into cubes. Put the onions with the lard over the cabbage. Pour some salt over the cabbage, then pour vinegar, orange juice or apple juice over the red wine and add the apples.
- Bring everything to a boil over medium heat. Put the ground spices and berries in a spice ball or tea filter and place in the cabbage. Let the cabbage simmer for about 3/4 hour.
- Add the currant jelly or cranberries and season to taste again.
