Red Chicken Curry

Ingredients for 3 servings:

  • 300 g chicken fillet(s) (chicken inner fillet) or chicken strips
  • 1 can coconut milk, reduced fat
  • ½ cup sour cream
  • 1 ½ tsp curry paste
  • ½ can pineapple or peaches
  • Salt
  • 1 m.-large onion(s), red
  • 1 clove(s) garlic
  • e.g. coriander

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Cut the chicken breast into small cubes, fry, and season with salt. Dice the onion and fry. Finely dice the garlic, add it, and fry briefly. Deglaze with the coconut milk and simmer gently. Stir in the sour cream and red curry paste. Simmer for 15 minutes. Finally, add the pineapple and simmer briefly. Season with salt and a little coriander, if desired. Serve with wild rice or noodles.
