Ingredients for 2 servings:

  • 2 cup(s) lentils, red
  • 1 bunch of spring onions
  • 1 bunch parsley, fresh
  • 1 lime(s)
  • 10 cocktail tomatoes
  • 4 tbsp olive oil
  • ½ tsp cumin
  • 1 tsp salt
  • ½ tsp ground pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes

Cook the lentils according to the instructions with a little salt. Chop the spring onions and parsley, quarter the tomatoes, and squeeze the lime juice. Mix the cooled lentils with the lime juice, oil, cumin, salt, and pepper and let them marinate for a while. Just before serving, add the tomatoes and herbs and marinate for another 5 to 10 minutes.
