Redfish on Risi Bisi

Ingredients for 4 servings:

  • 200 g rice
  • salt and pepper
  • 600 g redfish fillet(s) or other fish fillet
  • lemon juice
  • 4 spring onions
  • 2 tbsp oil
  • 300 g peas, frozen
  • 1 bunch of parsley
  • 250 ml hollandaise sauce (1 pack)
  • 2 tbsp coarse-grained mustard

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Boil plenty of salted water and cook the rice according to the package instructions. Pat the fish dry, cut into equal-sized pieces, and drizzle with lemon juice. Slice the spring onions into rings and fry in hot oil. Drain the rice, immediately mix it with the peas, and let it drain. Chop the parsley, add it to the rice along with the onions, and season with salt and pepper. Place everything in a shallow, greased dish. Pat the fish dry, season all over with salt and pepper, and place on the rice. Mix the hollandaise sauce with the mustard and spread half (or all) of it over the fish. Bake in a hot oven at approx. 220°C on the second rack from the bottom for approx. 20 minutes. Heat the remaining sauce and serve. Serve with tomato salad.
