Ingredients for 4 servings:

  • 800 g pork loin(s)
  • 300 ml white wine
  • 3 garlic cloves
  • 2 bay leaves
  • salt and pepper
  • coriander
  • 80 g butter
  • 100 g smoked bacon
  • 1 kg potatoes, small new potatoes
  • 2 tbsp parsley, finely chopped
  • 1 lemon(s)

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes

Marinated pork cubes

Cut the pork loin into even-sized cubes and marinate for 24 hours in a marinade made from white wine, peeled garlic cloves, bay leaves, salt, pepper, and coriander. The next day, heat the butter, cut the bacon into thin strips, and fry until golden brown. Remove the meat from the marinade, drain well, and fry it with the bacon, a few at a time. Peel the potatoes, add them to the meat, and pour the marinade over them. Place the pot over low heat, cover, and simmer until the potatoes are tender. Sprinkle with finely chopped parsley, garnish with lemon slices, and serve with fresh white bread.
