Reindeer steaks with cucumber and cream sauce

Ingredients for 4 servings:

  • 4 reindeer steaks
  • Fat for frying
  • salt and pepper
  • 200 g gherkins
  • 450 ml Game stock
  • 200 g cream
  • Parsley for garnishing

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Preheat oven to 80°C (top/bottom heat). Cut the cucumber into strips. Briefly sear the reindeer steaks on both sides. Season with salt and pepper. Wrap in aluminum foil and place in the oven for about 10 minutes, depending on the thickness of the steaks. Heat the fat in a pan and briefly sear the cucumber strips. Deglaze with game stock, then add the cream and bring to a boil. Season with salt and pepper. Arrange the steaks and cucumber-cream sauce on a plate and garnish with parsley. Serve with fried potatoes or potato croquettes. Chef’s recipe editor’s note: If you don’t want to use aluminum foil, use parchment paper or baking paper for the parcels. If you use lemon juice and salt, this is recommended for health reasons.
