Rice and vegetable stir-fry

Ingredients for 2 servings:

  • 1 bag of rice
  • salt water
  • 1 zucchini
  • 12 tomatoes (date tomatoes)
  • n. B. onion(s)
  • some balsamic vinegar, darker to deglaze

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 30 minutes

Also suitable for vegetarians and vegans. Super tasty and easy.

Cook the rice in salted water according to the package instructions. Dice the onion(s), slice the zucchini, and sauté in a frying pan with oil. Add the rice and cook briefly. Deglaze the rice pan with balsamic vinegar and add the tomatoes. Cook for another 5 minutes, depending on the desired degree of browning. Serve with baguette or roasted pork belly.
