Rice noodle salad

Ingredients for 4 servings:

  • 300 g pasta, Greek rice pasta (Kritharaki)
  • 3 garlic cloves
  • 500 g cherry tomatoes
  • 1 onion(s)
  • 200 g feta cheese
  • 50 g olives, black
  • ½ cucumber(s)
  • ½ pot of basil
  • 2 tbsp chives, fresh
  • 4 tbsp vinegar (white wine vinegar)
  • 7 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the pasta with the unpeeled garlic cloves in salted water until al dente. Drain, drain, and cool. Pick out the garlic cloves from among the pasta and set them aside for the dressing. Cut the tomatoes, olives, onion, feta cheese, cucumber, chives, and basil into small pieces. The pieces should be no larger than the rice noodles. Place everything in a salad bowl and toss with the cooled pasta. For the dressing, peel the garlic cloves and crush them in a mortar (if you don’t have a mortar, you can simply crush the garlic with a fork). Add the vinegar, oil, and spices. Pour the dressing over the salad and mix well. Season again with salt and pepper.
