Rice noodles with shrimp a la Gabi

Ingredients for 4 servings:

  • 200 g shrimp
  • 100 g noodles (rice noodles)
  • 1 red bell pepper(s), cut into fine strips
  • 1 yellow bell pepper(s), cut into fine strips
  • ½ chili pepper(s), pitted, in fine strips
  • 4 spring onions, finely sliced
  • 1 bunch coriander, leaves picked
  • 1 small pineapple, in small cubes
  • 4 slices of ginger
  • 1 tsp curry paste, green
  • 1 ½ tbsp fish sauce
  • 1 lime(s), the juice
  • 3 tbsp sesame oil
  • salt and pepper
  • lemon juice

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Pour boiling water over the rice noodles and let stand for 10 minutes. Mix the curry paste with about 3 tablespoons of hot noodle water. Then stir in the fish sauce, lime juice, and 1 tablespoon of sesame oil. Drain the rice noodles and cut into bite-sized pieces. Heat 2 tablespoons of sesame oil in a pan, fry the shrimp, season with salt and pepper, and drizzle with a little lemon juice. Remove from the pan and keep warm. Then cook the vegetables and pineapple cubes in oil at low heat. In a large bowl, combine the rice noodles, shrimp, pineapple vegetables, and cilantro, and stir in the marinade.
