Rice pudding, extra light

Ingredients for 2 servings:

  • ½ cup(s) rice (short grain rice)
  • 2 cup(s) milk (UHT milk 0.5% fat
  • 8 sweetener tablets
  • 1 pinch of salt
  • 2 cm vanilla pod(s) (real Bourbon)
  • ½ tsp cinnamon

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Wash the short-grain rice – ideally, place it in a sieve and pour it over water! Pour the milk into a saucepan and heat it on the stove. Add the sweetener and a small pinch of salt. Cut the vanilla bean lengthwise, scrape out the seeds, and add it to the milk. Add the washed rice, bring to a boil, cover, and let stand for 30 minutes with the lid off. Stir the rice, bring back to a boil, turn off the heat, and let stand for another 30 minutes. Finally, add the cinnamon, stir, and serve! This extra light rice pudding is best enjoyed lukewarm!
