Rice pudding with mandarins

Ingredients for 3 servings:

  • 750 ml milk
  • 180 g rice pudding
  • 4 m.-sized eggs
  • 80 g sugar
  • 50 g butter
  • some lemon zest
  • 200 g mandarin orange(s), drained
  • n. B. Powdered sugar for sprinkling

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 40 minutes

Grandma’s way

Cook the rice pudding in the milk and let it cool. Separate the eggs and beat the egg whites until stiff peaks form. Beat the egg yolks, butter, and lemon zest until fluffy. Fold the rice pudding into the egg yolk mixture, followed by the egg whites. Spread the mixture in a greased baking dish and top with the drained mandarins (you can also use other fruits, such as cherries). Bake in a preheated oven at 150°C (top/bottom heat) for approximately 35 minutes. Sprinkle with powdered sugar and serve.
