Ingredients for 4 servings:
- 3 peppers
- 200 g feta cheese
- 1 ½ cup(s) rice
- 1 tbsp tomato paste
- 1 tbsp herbs de Provence
- 3 tbsp vinegar
- salt and pepper

Cook the rice in water according to the package instructions. Meanwhile, wash and finely chop the bell peppers. Chop the feta cheese as well. For the dressing, combine the tomato paste with the herbs. Gradually add the vinegar. When the rice is ready, combine the bell peppers, feta cheese, and the dressing. Season with salt and pepper. Tip: You can also use other vegetables.
