Risotto with meat

Ingredients for 2 servings:

  • 300 g minced meat (chicken, turkey or pork)
  • 150 g basmati rice
  • 1 bell pepper(s), red
  • 1 onion(s)
  • 1 garlic clove(s), squeezed
  • 500 ml water
  • 2 tbsp tomato paste, more if needed
  • 2 tsp stock powder, e.g. vegetable stock powder
  • 1 tsp flour
  • Paprika powder
  • Chili powder or flakes
  • Oil for frying

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Peel and chop the onions, then fry the onion in a large pan with oil. Cut the meat into bite-sized pieces, add it to the pan, and fry. Then season with salt and pepper. Wash, chop, and add the bell pepper. Add the uncooked rice to the pan with the meat and fry briefly. Mix the stock powder, flour, 2-3 tablespoons of tomato paste, and garlic, stir into the water, and bring to a boil. Deglaze the chicken and rice mixture with the stock and bring to a boil. Season with salt, pepper, paprika, and chili powder (or chili flakes). Simmer for about 15 minutes, until the rice is tender. Approximately 450 kcal per serving.
