Ingredients for 3 servings:
- 750 g roast beef, very tender
- 2 tbsp rapeseed oil
- salt and pepper
- Paprika powder, sweet

Preheat the oven to 100 degrees top/bottom heat. Wash the beef and pat dry. Remove any tendons and fat. Then season as usual with salt, pepper, and paprika, rubbing the spices well into the meat. Heat the rapeseed oil in a pan and sear the beef roast until crispy all over. You can later use the pan juices to make a delicious gravy. Place the roast in a casserole dish and bake in the oven for about 5 hours. The minute doesn’t matter. It can be a little longer or shorter. After the specified time, the roast will still be slightly pink on the inside. So if you prefer it rare, reduce the time considerably; if you prefer it well done, add another hour. Serve the roast straight from the oven. Because it’s cooked at 100 degrees, it won’t be as hot as it would be from a pot, and will therefore cool very quickly.
