Roast beef with herb and mustard crust

Ingredients for 6 servings:

  • 1 kg roast beef
  • 3 tbsp oil
  • Salt and pepper, freshly ground
  • 1 bunch of parsley
  • 1 bunch marjoram
  • 1 bunch of thyme
  • 1 bunch of basil
  • 4 tbsp mustard, medium hot

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Rinse the roast beef under cold running water, pat dry, and remove the thin layer of fat with a sharp knife. Heat oil in a pan. Sear the meat all over. Season the meat with salt and pepper and place it in a shallow ovenproof dish. Place the dish on the oven rack. Top/bottom heat: approx. 220°C (preheated) Fan oven: approx. 200°C (not preheated) Gas mark 4-5 (not preheated) Roasting time: approx. 20 minutes. Meanwhile, for the herb and mustard crust, rinse the parsley, marjoram, thyme, and basil, pat dry, pluck the leaves from the stalks, finely chop or shred, and mix with the mustard. Brush the roast beef with the herb and mustard mixture and continue cooking for a further 25 minutes at the oven setting specified above. Cover the roast beef and let it rest for about 10 minutes. Boil the roast juices with a little water and season with salt and pepper. Slice the meat and serve with the sauce.
