Ingredients for 3 servings:
- 1 rabbit
- 1 bunch of soup vegetables
- 3 tbsp mustard, medium hot
- salt and pepper
- Oil for frying
- 600 ml broth
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 45 minutes
Season the rabbit with salt and pepper and rub with mustard. Then sear it on all sides. Chop the vegetables and add them. Pour in approximately 600 ml of broth, cover, and simmer at low heat for 1 to 1.5 hours. Strain the vegetables through a sieve to make a sauce.
