Roberto's Italian pasta salad

Ingredients for 4 servings:

  • 200 g pasta (penne or rigatoni)
  • 2 cans of tomatoes, peeled, chunky, 400g each
  • 150 g mozzarella or hard cheese
  • 150 g ham or meat sausage (Lyoner)
  • 100 g olives, green and black
  • 150 g corn from the can and/or zucchini
  • 1 bunch of basil
  • 1 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • salt and pepper
  • Tabasco
  • 1 pinch(s) of sugar
  • Worcestershire sauce

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

ideal as a main course or as a side dish in summer

Cook the pasta in salted water and let cool. Add the canned tomatoes and their juice to a bowl; season with salt, pepper, a pinch of sugar, a dash of Tabasco, Worcestershire sauce, the roughly chopped basil, and balsamic vinegar. Then stir in the olive oil. Dice the mozzarella or hard cheese and ham, halve the olives if desired, and toss everything in the tomato marinade with the pasta and sweetcorn. P.S.: If the pasta salad is only being served as a side dish, for example, to grilled food, you can omit the ham or sausage. Strange as it may sound, the salad only tastes best with canned tomatoes, not fresh tomatoes.
